Induction Hotplate

On our anniversry date to the big city of Idaho Falls, we came upon this curious item at the kitchen store. An induction cooker. Works with magnetic properrties. The pan must be stainless steel or cast iron. The pot itself cooks the food, the cooktop does not heat up. Way cool. Oh the money we spend to get my dh to help with the cooking! It will be fun to use!

Anniversary

January 3rd was our 39th wedding anniversary. Dale was sweet and bought me a bouquet of flowers. I love the colors. We are celebrating our special day on Saturday with lunch and a movie!

BYU-I Student

Let me introduce my grand-niece Brittany Allen from Alabama. She is here attending the winter semester at BYU-I and this is her apartment at Nauvoo House. Her major is nursing and I sure hope she enjoys it here. Rexburg is a great place to live and get an education. Welcome Brittany!

Healthy Recipe- Pizza

Many of you may know that I don't eat flour or sugar so I was excited to get this recipe from my daughter Mandy who saw it on Pinterest. I made it and love it so I'm sharing it with you. Start out with a fresh cauliflower. Cut into pieces and pulse it in the food processor until it looks like rice. Measure out 1 cup if you need one serving. Cook in microwave for 5 min. Add spices and egg. Form in a circle on a greased pan and bake in hot oven. Add 1/2 c pizza sauce, pepperoni, and Parmesan cheese. It really is good and no carbs! One time I made this recipe and used some leftover cooked cabbage. Worked like a charm! Cauliflower Crust Pizza: 1 c cooked, riced cauliflower 1 c shredded cheese 1 egg, beaten 1 tsp dried oregano 1/2 tsp crushed garlic 1/2 tsp garlic salt crushed peppers for flavor Each cauliflower will make about 3 servings.
